Popsicles, Ice lollies and Freezer pops – Oh My!

Summer means popsicles…right?!

I don’t know if you’ve noticed the amazing weather out there, but we have! Spending time in lighter clothing, enjoying the sun and picnics in the park or the back garden. We’re all finally getting vitamin D onto our skin and with the long days, this boosts moods everywhere!

You might find you’re eating less and fresher vegetables. The stodgy (and warming) soups and stews make way for salads, smoothies and cold soups.

It’s also time to keep cool, hydrated and satiated! So if you’re looking for a way to do this and stay healthy, try these delicious popsicles – I’m from Canada so we call them popsicles, but you might call this an ice lolly or a freezer pop…they taste great no matter what name you give them.

Get ready

You’ll need a food processor or blender, popsicle container and sticks as well as the following ingredients.


  • 225g strawberries
  • 300g Greek yoghurt or coconut yoghurt (for the dairy free)
  • 2 bananas
  • 1 tsp vanilla extract
  • 12 raspberries
  • 1/2 tsp cinnamon
  • 45g chia seeds

Add the yoghurt, bananas, chia seeds, cinnamon and vanilla to a small bowl and mix. Set aside to allow the chia seeds to soak up some of the liquid.

Place the strawberries in a food processor or blender and blend until smooth. Pour into the molds until they are half full and place into the freezer for 5 minutes. Rinse the blender or processor.

Pour the yoghurt mixture to the blender and mix. Fill your popsicle molds with the yoghurt mixture until 5cm from the top, trying to keep the layers separate. Put raspberries into the molds and push down with a toothpick. Do for each of the popsicles. You can keep these in separate layers or use a knife or stick to slightly marble the layers.

Put these in the freezer for several hours or overnight. Let us know what you think about them by commenting below!

*Depending on the size of your molds, you may find that it fills them to more or less than 12 servings. If you find there isn’t enough to fill up the molds, then add water to the yoghurt mixture. This will also help the popsicle freeze harder. If it’s too much, you can put the rest in a plastic cup and add a stick to it.
